Cherry Hibiscus Juice

Cherry Hibiscus JuiceI was going to start by saying Agua de Jamaica (pronounced ha-my-ka) is my second favorite Agua fresca (the first being Horchata), but let’s face it, they all rank high on my list of faves.  It’s a simple, refreshing, slightly tart tea that is very similar to cranberry juice. This version of agua de Jamaica  (or Hibiscus water) is packed with loads of vitamins and antioxidants because I’ve added a healthy dose of Cherries.

Facts about Cherries and Hibiscus…

Cherries are rich in Potassium, Vitamin C, and B Complex.

Cherries help fight the inflamation of Arthritis, Heart Disease, and Cancer .

Hibiscus tea has shown to lower high blood pressure and reduce cholesterol.

Ingredients for this recipe are:

30 cherries (seeds and stems removed)
8 cups water
1 cup dried hibiscus flowers
1 cup sugar
additional 8 cups cold water

In a large pot bring 8 cups of water to a boil.  Add the cherries and bring back to a boil.  Reduce heat to medium, cook for about 15 minutes.

Now, there are two ways you can blend the cherries…

Option 1: Hand blender
After 15 minutes, carefully blend the cherries in the pot of water with a hand blender with one to two second pulse actions each time.  If you go too fast and push the GO button without stopping every two seconds, it could splatter and burn you or anyone else around you.  Take your time blending the cherries if you are using a hand blender!

Option 2: Regular blender
After 15 minutes use a slotted spoon to scoop out the cherries and transfer them to a blender.  Pour about one cup of the water from the pot into the blender.  Blend well. Return the cherry mixture back into the pot.

After you have blended the cherries, add the dried hibiscus flowers.  Continue boiling on medium heat another 10-15 minutes.

After 10-15 minutes, strain out the hibiscus with a slotted spoon as much as possible.

Pour in the cup of sugar and mix until all the sugar has completely dissolved.

Moving on…

Strain all the cherry pulp and any remaining hibiscus flower particles out with a fine mesh strainer.

Pour the strained juice into a large pitcher as you go.

When it has all been strained, add the last 8 cups of cold water to the pitcher, stir well and serve on the rocks.
