Paleta Week is back! My dear friend Lola from Lola’s Cocina is hosting a virtual paleta party for the second year in a row that includes recipes shared by more than 25 different food bloggers. It runs from June 21-25th. If you haven’t already seen my posts on Instagram, then head over there to follow the Paleta Week hashtag to see all the paletas for yourself, and to participate in the paleta-inspired giveaways she’s hosting.
Next week I’ll update this post with a full list of everyone who contributed. For now, I want to share with you two paletas that I’ve contributed to her virtual paleta parties.
Last year I shared a three-ingredient recipe for cherry lime and coconut milk yogurt paletas.
This year I’m sharing another three-ingredient recipe that is put together in three easy steps.
Berry Mint Tea Paletas with Frozen Fruit and Freshly Brewed Tea.
Directions to make six of these refreshing popsicles are as follows:
- Bring 1 ½ cups filtered water with ¼ cup sugar to a boil. As soon as the water starts to boil and all the sugar has dissolved, turn off the heat and steep 2 Bigelow mint medley tea bags in the hot water for five minutes.
- Remove the tea bags after five minutes then blend the tea with 2 cups frozen berries until smooth. A hand blender is perfect for this. For the berries, I purchased a frozen berry blend bag that had strawberries, raspberries, and blueberries, but didn’t use the blueberries in this recipe.
- Strain the berry and mint tea liquid through a fine mesh strainer before pouring into your molds.
These paletas are the equivalent of an ice-cold glass of tea which makes them perfect for the summer. And with the summer that we’ve been having these past two weeks with high temps, I could eat at least three of these in a day. They are so refreshing.
