It’s officially the first week of Summer and you know what that means! It’s paleta week!!

If you’re new here, paleta week is a week-long celebration between dozens of food blogging foodies. Everyone shares a Mexican inspired paleta recipe to help kick-off Summer. The host behind it all, Lola from Lola’s Cocina, started paleta week back in 2016 and has since then kept this fun tradition going. I couldn’t be more excited to share my paleta week recipe with you today.

Coconut Pineapple Lime Paleta Shots

My goal each year has always been to try and keep the ingredients simple and with only three ingredients. The only exception to my 3-ingredient rule is that I don’t count these two basic staple ingredients: sugar and water. Those are the easiest to come by and most people already have those at home.

There aren’t any step-by-step photos again because they’re super easy to make.

Directions:

  1. In a small heat-safe cup or bowl, warm up 2 tablespoons fresh lime juice in the microwave for about twenty seconds. Add 2 tablespoons white sugar and stir until the sugar is completely dissolved.
  2. In another large cup or bowl, combine 3/4 cup unsweetened canned coconut milk, 1 cup canned pineapple chunks, and lime syrup. Blend all of it with a hand blender until smooth.
  3. Evenly pour the liquid into tall shot glasses, cover with plastic wrap, and insert a popsicle stick. Freeze overnight.

These Coconut inspired paletas have the same flavor as a pina colada with the extra kick of lime.

For added fun and flavor, I topped them with coconut flakes and a drizzle of chamoy sauce. The last two additions are optional, but I’ll be honest with you. If I had to choose between one of these popsicles with or without chamoy, I would go for the one with chamoy.

Or maybe next time I’ll have one with a shot of patron and use it as a chaser. Just sayin’. 😉

      They are super easy! I used my cup blender attachment that came with my blender. They were gone so fast and I was asked to make more, lol.
