Strawberry Watermelon Margaritas

Do you ever have leftover watermelon?  Even with the small personal size watermelons, we never seem to be able to finish them.  The problem with watermelon after cutting it open is if you don’t eat it after a couple days, it starts to get soft as the juices seep out of the fruit flesh, which leaves you with soggy watermelon.

One way you can save your watermelon leftovers is to freeze it and use it in smoothies, aguas frescas, fruit drinks, and cocktails!  For Valentine’s weekend I made Strawberry Watermelon Margaritas with frozen watermelon, mint, and strawberries.  They’re going to be perfect for the Summer. Here’s what I used:

Strawberry Watermelon MargaritasThe amount of alcohol in this recipe is perfect for someone who doesn’t drink alcoholic beverages too often. My personal preference is to go light on the alcohol because I’m a lightweight, and this recipe was the perfect amount of liquor for me.

Before you start, wash the strawberries and remove the stems and leaves. Add them into a blender with the frozen watermelon cubes, mint, triple sec, tequila and crushed ice.  If you don’t have an ice maker in your fridge that’s ok. You can put regular ice cubes from a tray in a large zip-lock bag and crush them into smaller chunks by hitting them with a rolling pin on a hard durable surface.  If you have a good blender, you can also just add it to the blender first and crush the ice by giving it a few pulses before adding the rest of the ingredients.

I also used equal parts tajin fruit seasoning and kosher salt, plus a little bit of lemon for the rim of the glasses.

Strawberry Watermelon MargaritasOn a plate wider than the rim of the margarita glass, combine the tajin fruit seasoning and salt well.

Moisten the rim with a lemon wedge, then dip the glass onto the tajin and salt seasoning.  Do this for each glass.

Strawberry Watermelon MargaritasAfter you have prepared the margarita glass rims with salt and tajin, blend the watermelon, strawberries, ice, mint, and liquors in the blender until there are no large pieces of mint leaves or fruit left.

Strawberry Watermelon MargaritasPour it into the glasses and garnish each one with a tablespoon of minced strawberry and mint if you like.

Ingredients

  • Fresh lemon wedges
  • Tajin fruit seasoning
  • Kosher salt
  • 3 cups frozen watermelon
  • 2 cups fresh strawberries
  • 1 1/2 cups crushed ice
  • 8-12 large mint leaves
  • 1 1/2 ounces triple sec
  • 2 ounces tequila
  • 2 tablespoons minced strawberries with mint for garnish optional
