A simple solution to a busy morning is this baked tater tots with bacon and cheddar cheese breakfast side dish.
I woke up Sunday morning wanting something a little different than what we typically have on the weekends for breakfast. Our go-to breakfasts during the weekend are typically a combination of eggs, potatoes, pancakes, toast, fruit, bacon, or sausage. Every now and then I’ll make chilaquiles or papas (or eggs) with chorizo, or breakfast burritos if we have leftovers from the day before.
This time I wanted potatoes, but we didn’t have any. Then I remembered we had a half bag of tater tots left in the freezer so I decided to use them up. After making this breakfast side, I realized it’s also one that can possibly be made on a weekday morning when the kids are getting ready for school. It really isn’t difficult at all.
If you dice the bacon and shred the cheese the night before, you can have it done in 20 minutes. It could work! Depends on how much time you give yourself in the morning, though.
All you need is one pound of tater tots (or half of the tater tots from a 32oz bag), a baking dish that will allow them to all fit in one single layer, about three slices of bacon (diced), and at least half a cup of shredded mild cheddar cheese. You can definitely add more shredded cheese or bacon if you want, especially if you decide you want to use the whole bag. Know what I mean, jellybean?
First bake the tater tots with the bacon in the oven at 425 degrees for 20-22 minutes, then add the shredded cheese and bake them another 3 minutes. That’s it!
On a side note, if you have a little more time, I recommend trying these breakfast potatoes in enchilada sauce, too!
Tater Tots with Bacon and Cheddar Cheese
Ingredients
- 1 pound frozen tater tots (or half of the tater tots from a 32oz bag)
- 3 slices raw bacon, diced, ½ the fat removed
- ½ - ¾ cup mild cheddar cheese, shredded
Instructions

Preheat oven to 425 degrees.

Lay the tater tots in a single layer in a baking dish. Evenly sprinkle the diced bacon over the tater tots. Bake for 20-22 minutes.

Add the shredded cheese, bake another 3 minutes.
This sounds great. Is the bacon diced and added raw, or precooked before adding to the tots to cook to maybe then be extra crispy?
